The Spain spread. Gazpacho chilled the night before. Gambas al ajillo made right before kickoff. Tortilla española cut into wedges. Pan con tomate — ripe tomatoes, not optional. Most of it works at room temperature. Tapas culture is, at its core, eating-while-watching culture.
GAZPACHO

2 large ripe tomatoes, ½ cucumber peeled, ½ red bell pepper, 2 tbsp red onion, 1 tbsp sherry vinegar, 2 tbsp extra virgin olive oil, 2 tbsp basil, 1 tbsp parsley, 1 tbsp chives, salt and black pepper.

Blend everything until smooth. Season. Chill for at least 1 hour before serving. Serve in small glasses or cups. Make it the day before and it gets better.

GAMBAS AL AJILLO

12 large shrimp peeled and deveined, 4 garlic cloves thinly sliced, ¼ cup olive oil, ½ tsp smoked paprika, pinch crushed red pepper, juice of ½ lemon, 1 tbsp parsley, 4 slices grilled bread.

Heat olive oil in a pan. Add garlic, let it turn golden. Add shrimp and paprika. Cook 2 minutes per side. Finish with lemon and parsley. Serve in the pan with bread. Make it right before kickoff.

TORTILLA ESPAÑOLA

6 eggs, 3 medium potatoes peeled and thinly sliced, 1 medium onion thinly sliced, ¼ cup olive oil, salt.

Cook potatoes and onion slowly in olive oil until tender, not crispy. Drain. Beat eggs, combine with potato mixture. Cook in a 9-inch pan on medium until set on the bottom, flip with a plate, slide back in. Rest 5 minutes before cutting into wedges. Serves 8 as a tapa.

PAN CON TOMATE

4 thick slices sourdough or country bread, 2 ripe tomatoes halved, 1 garlic clove halved, extra virgin olive oil, flaky salt.

Toast or grill the bread. Rub one side with the cut garlic clove, then rub vigorously with the cut tomato until the flesh is absorbed. Drizzle with olive oil. Flaky salt. That’s the whole recipe. Do not skip the ripe tomatoes.

The Argentina spread. Empanadas made the morning of, reheated before kickoff. Choripán with chimichurri — this is the most important thing on the table. Chimichurri made the night before. Malbec from Mendoza. Fernet con Coca if you want to go the full distance.
EMPANADAS (BEEF)

1 lb ground beef, 1 onion diced, 2 hard-boiled eggs chopped, ¼ cup green olives sliced, 1 tsp cumin, 1 tsp smoked paprika, salt and pepper, 12 store-bought empanada discs.

Cook beef and onion until browned. Add cumin, paprika, salt, pepper. Cool completely. Mix in eggs and olives. Fill each disc with 2 tbsp filling, fold and crimp. Bake at 400°F for 20 minutes. Make them the morning of and reheat before kickoff.

CHORIPÁN

4 Argentine-style chorizo sausages (or Italian sausage as substitute), 4 crusty bread rolls, chimichurri.

Grill or pan-cook chorizo until cooked through and charred on the outside. Split rolls. Slice chorizo lengthwise. Load into bread. Cover with chimichurri. This is the most important thing on the Argentina side of the table.

CHIMICHURRI

1 cup flat-leaf parsley finely chopped, 4 garlic cloves minced, 2 tbsp fresh oregano, ½ cup olive oil, 3 tbsp red wine vinegar, 1 tsp red pepper flakes, salt.

Combine everything. Rest for at least 30 minutes before serving. It gets better the longer it sits. Make it the night before. Use it on everything: the chorizo, the bread, the empanadas, as a dip.

Store-bought croissants are an acceptable substitute. Or: use any good bakery croissant recipe. Argentina’s version is smaller, sweeter, and brushed with a sugar syrup.

Spain: Sangria is the obvious call and it is obvious for a reason. Red wine, brandy, orange juice, sliced citrus, sugar, soda water. Make it the night before. Spanish beer — Estrella Damm or Mahou — is increasingly available at specialty stores. Cava, the Spanish sparkling wine, works if Spain scores and you want to react accordingly.

Argentina: Malbec is Argentina’s wine and it belongs on this table. Specifically, Malbec from Mendoza — the region responsible for making Argentine wine a global conversation. Fernet con Coca is Argentina’s most iconic drink combination: Fernet-Branca, a bitter Italian digestif that Argentina adopted and made its own, mixed with Coca-Cola over ice. It is an acquired taste with a devoted following. Mate is the traditional Argentine drink but it requires specific equipment and preparation.
